Baby Nutrition- Purple Sweet Potato

Have you tried a purple sweet potato yet? Also known as the Okinawan Potato.

Most babies just love the taste of sweet potato, and it is so easy to add other flavours to it that might not taste as nice blended, like broccoli, asparagus, turnip.

Purple Sweet Potato however is on another level from the normal orange sweet potato from a nutritional perspective.

They contain the same as normal sweet potato: Vitamin A (Beta Carotene), Vitamin C, Potassium, Manganese, as well as plenty of Fiber. They also contain an antioxidant called Anthocyanin. Antioxidants are essential in the body in order to eliminate toxins from our cells, and blood stream. Anthocyanin also has powerful anti-inflammatory effects.

How does it taste? It does not taste as sweet as the orange flesh version, so I would recommend adding some carrot perhaps if you wanted to have it naturally sweeter for your baby.

Tip!

If you steam a sweet potato you won’t lose the anthocyanin in the cooking process, but you will if you boil it.

Your baby may look like they ate an octopus after eating this, so don’t wear white and use a big bib!
